Pretty much the most delicious tacos you will ever eat!
Total cooking time: about 30 minutes
1 pound shrimp, peeled, tails taken off
1 Tbsp Canola oil
½ tsp garlic powder
½ tsp cumin
¼ tsp salt
4 cups coleslaw mix or ½ head each white and purple cabbage, shredded
1/3 cup mayonnaise
½ tsp white vinegar
½ Tbsp sugar
1 cup chopped cilantro
½ cup chopped green chile
1 whole avocado, chopped
1 lime, sliced in wedges
12 corn tortillas, warmed in paper towels
½ cup shredded cheddar or Mexican blend cheese
In a small bowl, mix garlic powder, cumin, and salt. Add canola oil to a large skillet and turn on medium high. Allow the oil to heat up, then add the shrimp and seasoning. Sauté shrimp for 6-8 minutes or until they turn pink.
For the slaw: mix shredded cabbage, mayo, vinegar, and sugar in a medium bowl.
Warm tortillas 5-6 at a time in between damp paper towels for about 30 seconds.
To assemble: Add 3-5 shrimp to each taco, depending on how large the shrimp are. Add some slaw, and top with cilantro, green chile, avocado, and squeezed lime.
