Sweet Zucchini Pear Muffins

If you like zucchini bread, you’ll love these muffins! With a little purred pear and whole wheat flour in the mix, you will lower your calories from fats, add some fiber, and have a wonderful snack or breakfast.
Makes 24 muffins
1 ½ cups all purpose flour
1 ½ cups whole wheat flour
1 tsp baking powder
6 Tbsp butter, melted
1/3 cup cooked pureed pear (about 2 small pears)
3 cups zucchini, shredded
1 1/3 cups sugar
2 eggs, slightly beaten
Blend the flours with the baking powder in a large bowl. Prepare the pears, peel and core them, then cook by steaming. You can also just buy canned pear in water and use that. Puree the pear in a food processor or by mashing with a fork. Add melted butter, pureed pear, zucchini, sugar, and eggs to the flour mixture. Gently stir until combined, don’t over stir! This is a common reason muffin tops end up flat! Pour into lightly greased muffin tins. Bake at 350 F or 175 C for 15-20 minutes or until center is fully cooked. You can use a toothpick to test the center.
