Easy Home-Made Beef Taquitos, Sauteed Zucchini, and Home-Made Salsa

Makes 6 Servings

These “little tacos” are super easy and seriously delicious.

500 grams (about 1.1 pounds) lean ground beef

2 cloves garlic, minced

1/2 tsp onion powder

2 tsp chili powder

1/2 cup green chile

1 cup shredded cheddar cheese

18 corn tortillas

2 Tbsp oil

Preheat oven to 425 F or 215 C.

Brown ground beef in a large skillet.  Add minced garlic, onion powder, chili powder, and green chile toward the end of the browning, and cook for 2-3 minutes longer.  Heat corn tortillas in a stack between two moist paper towels in the microwave for 30 seconds to soften them.  Fill each tortilla with about 2 Tbsp of the beef mixture and about 1 Tbsp of shredded cheese.  Roll the tortilla and place in a 9 x 13 pan.  After all the tortillas are filled and rolled, brush the top with oil.  You may need less oil, and that is fine, you will save some Calories if you use a little less, but don’t skip it all together or they won’t get crispy!

Bake for 14-16 minutes at 425 F or 215 C.  The taquitos will be crispy and delicious!  Serve with the home-made salsa recipe on this page and you will wonder why you ever bought taquitos from the store.  To complete the meal, I cooked 2 zucchinis in the skillet with 1 tsp oil, seasoned with salt and garlic powder, which will add about 18 Calories to the meal (6 servings of zucchini also).
