Whole Grain Banana-Nut Muffins

These super-easy and amazingly delicious muffins can be used for breakfast or a healthy snack.  They are high in fiber so they keep you full longer!


Makes 18 muffins


2 cups whole wheat flour

1 tsp baking soda

1/2 tsp salt

3/4 cup sugar

1 cup chopped nuts

4 small mashed bananas

2 eggs

1 tsp vanilla

1/3 cup butter, melted


Mix dry ingredients together.  Mix liquid ingredients together.  Blend dry and liquid ingredients until just blended.  Super easy, right?  Grease the muffin tins.  Now bake at 325 F or 165 C for 20-25 minutes or until a toothpick inserted into the center of the muffin comes out clean.  Now ENJOY!

Tips: Don’t over-stir or your muffins may turn out flat.  Use extremely ripe bananas for easy mashing.  If your bananas are getting too ripe and you don’t have time to make muffins that day, freeze the bananas.  Frozen, almost-too-ripe bananas make perfect banana muffins!  (Let them thaw a little before you mash them.)
